Kitchen iQ Reporting


Introduction

This document provides a summary of the various Kitchen iQ reports that are available at head office.

  • Item Preparation Times report - The Item Prep Times Report identifies the slowest and fastest items to prepare in the kitchen. This information can help you optimise your menus and identify training requirements.

  • Site Summary report - The Site Summary Report can be viewed at Head Office to review and compare performance between sites.

  • Delivery Summary report - The Delivery Summary report shows delivery time performance to give an overview of timings per course, and timings overall for the journey through the kitchen.

  • Late Ticket report - The Late Ticket report identifies late tickets with additional detail on items, courses and staff involved.


Item Preparation Times Report

The Item Preparation Times report identifies the slowest and fastest items to prepare in the kitchen. This information can help you optimise your menus and identify training requirements.

The Item Preparation Times report is viewed in the Dimensions reporting application. Preparation time within this report is defined as the total time a recipe spends at preparation and assembly stages excluding time spent on system hold. Time spent at a serving stage is not included in this report.

The report can be run at site for that site, or at Head Office for one or multi sites for a specific date, period or date range to show all recipes that have passed through the kitchen in the selected period.



The report shows the following for each item:

  • Average prepare time

  • Shortest prepare time

  • Longest prepare time

  • Number of items (the number of times a product was sold in the period, but only as the parent item not when it was a choice)

  • % of total (items for that row divided by total items for that period)


The following items are excluded from the report:

  • Items still at a serving or preparation stage

  • Instructions


Users can drill down by:

  • Aztec product structure

  • Aztec estate structure (to site only, not sales areas or tills)

  • Kitchen iQ order stage

  • Reporting period as defined in Aztec Finance


When drilling down by reporting period, the report header is updated to show the session that the report has been filtered to show.


Site Summary Report

The Site Summary report can be viewed at Head Office to review and compare performance between sites.

Delivery time is the total time a recipe spends at preparation, assembly and serving stages (excluding time spent on system hold).

The report can be run for a date, period (week/month) or date range and at site for that site, or at Head Office for one, some or all sites.

The report displays a summary of items which have passed through the kitchen in the selected period.

The report includes a single row for each site and if multiple sites, they are grouped by Company/Area/Site with subtotals shown for area and company.



The report includes the following column headings:

  • Average delivery time (for the selected period)

  • Number of orders (where an order is a ticket, i.e. a group of items from the same account, ordered at the same time, and with the same course/order destination)

  • Number of items

  • Number of late items (number of items that exceeded their target course time defined in the kitchen config)

  • Percentage of late orders (where an order is a ticket, i.e. a group of items from the same account, ordered at the same time, and with the same course/order destination)

  • Average wait time (total time from arriving at the serving stage to being delivered )

  • Average check back time (the time from a table check notification being generated to it being acknowledged using a bump or message action)

  • Average turn time (from EPOS) - from the time an account was started to the time it was paid/closed)

  • Late order ranking (based on number of late orders)


Items only appear in the report once they have left the kitchen (an item being a recipe which has passed through the kitchen as an orderline (not as a childline))


You can drill down by:

  • Kitchen iQ Course (as defined in Kitchen iQ not Aztec)
  • Aztec estate structure (down to site level only, not down to sales areas or tills)
  • Reporting period as defined in Aztec Finance. If a user drills down by reporting period, the report header is updated to show which session the report has been filtered to show.

Delivery Summary report

The Delivery Summary report shows delivery time performance to give an overview of timings per course, and timings overall for the journey through the kitchen.

Delivery time is defined as the total time a recipe spends at the preparation, assembly and serving stages, excluding time spent on system hold. It is the total journey time through the kitchen from the point it becomes an active order to the point it leaves for delivery to a customer.

Wait time is defined as the total time a recipe is active at a serving stage - this is the time it takes a member of serving staff to collect an order and take it to a customer.

The Delivery Summary report can be run for a date, period (week/month) or date range and at site for that site, or at Head Office for one, some or all sites



The report includes a summary of items that have passed through the kitchen in the selected period.

The following information is displayed, broken down by Kitchen iQ course:

  • Average delivery time (for the selected period)

  • Average wait time (for the selected period)

  • Number of orders • number of items

  • Average items per order

  • Number of late orders

  • Percentage of late orders (based on the number of late orders from the total number of orders)

You can drill down by:

  • Kitchen iQ Course (as defined in Kitchen iQ not Aztec)
  • Aztec estate structure (down to site level only, not down to sales areas or tills)

At Head Office, if a user drills down by estate structure, the report header is adjusted to show that a site filter has been applied (i.e. site/area/company name if a single site/area/company is selected)


Late Ticket report

The Late Ticket Report helps to identify the volume of late tickets, average delivery times and further detail on courses and staff involved, is shown when drilling down on areas of interest. This information can help you identify problem areas to optimise your customer service and identify training requirements.

The Late Tickets report is viewed in the Dimensions reporting application.
